Don't Forget to Pack Your Plan!

Happy hump day!  A friend of mine posted a video of Michael Franti & Spearhead on her Facebook page yesterday, and now I can’t get the song out of my head.  Here is your song blurb du jour.  I LOVE this one!!!!

I was just thinking that we are just about halfway through 2010.  Can someone PLEASE tell me where the HECK the first half went?  Wow…that was quick.  This week has been going well for me (no trips, spills, or stumbles!!!).  I had a maintain week this week, which is fantastic in my book!  Getting read for the grind of month-end and quarter-end, but the reward of vacation is not too far down the road! 

My son finished up his first session of swimming lessons for this year, and we are gearing up for session 2 which starts on Saturday, July 10th.  The following Tuesday, I have the honor of escorting the 10 year old down to Orlando for her second session of “Camp Grandma”.  We sent her to my mom’s last year and she really had a good time with them.  We did too back in Texas.  LOL…we ended up with a much needed break.  Adam wasn’t really fazed at Morgan’s absence.  We asked him last year where he thought Morgan was.  His reply? “Morgan is In her room mom!” Soooo….according to Adam, his sister spent last summer up in her room.  Probably not a bad place for her, but not where she actually was.  It will be interesting to see what he says this year when he realizes that she isn’t home!  

We also have been spending a bunch of time at my favorite store lately—Half Price Books.  I decided that Morgan should be doing some summer reading to keep fresh for next year.  She is actually enjoying it, and each week she reads, she gets a $3 gift card that she can use toward a new book.  This week she dived into Norton Juster’s The Phantom Tollbooth—this one was one of my favorites!!! I am so glad that the kids have interests OTHER than just the video game or the iTouch.  Go Morgan!

I keep focusing on how the scale should not be the end-all be-all of your success indicators.  I have been taking pictures and taking measurements throughout my journey.  This last week, I was with my husband trying to beat the heat and we did some walking around in cooler places (the mall…IKEA…grocery stores…) and while at the mall, we went into various stores, including Victoria’s Secret.  I have not been able to purchase ANYTHING in that store in over 15 years or so, because they don’t make clothes or intimates for bigger girls.  I was about to walk out when Steve suggested that I try on some bras, because I needed to replace some older ones sitting in my drawers.  I took a couple in, tried them, and they fit!  I about fell over.  I ended up finding several that were on sale, and was able to clean out my drawers of some stuff that no longer fit me! (I like to call that ‘undergrowing’ stuff—as compared to OUTGROWING!!!)  That was really a great feeling.

The workouts are still challenging, and are still very much sweat-inducing. I also learned that I have more endurance than I give myself credit for.  I am really growing to LOVE the elliptical machine.  It challenges me and helps me to burn many calories in an abbreviated time period.  In 15 minutes I can earn 3 activity points, which isn’t too shabby…and when you tack on the circuit training that we do afterward? I can earn as many as 7 – 9 activity points per session.  My personal strategy is to try and NOT use these to splurge during the week.  I just like to know how much activity I get in during the week.

This week’s topic, as you probably inferred from the subject of the email, deals with staying on plan while you are on vacation.  I deal with vacations basically like any other day.  If I am in town, I still attend my meetings, as per usual.  If I am out of town, I find a meeting and go while I am gone.  I can give myself 45 minutes to remind me why I embarked on my journey in the first place.  In Florida, I know where my meetings are. When I go visit Steve’s parents in North Carolina (since we used to live there too…) I know where those meetings are.  I use the internet to research restaurants and try to make wise choices so that at WORST I maintain, and not gain.  I actually manage to LOSE on occasion.

These are a few tips that I included from this week’s Weight Watchers Weekly:

Have a good trip….

Getting there isn’t always half the fun of going on vacation; sometimes it’s not fun at all—lost baggage, traffic jams, cranky passengers (we ALL know what that’s like…).  When you’re stressed, you may be more inclined to eat unwisely, especially if the only food on offer is the fast-‘n’-greasy kind.

A few solutions:

  • Work out the kinks, physical and mental, with some fell-better shoulder rolls and body stretches.
  • Take a walk if you’re delayed at an airport: It’ll help you de-stress and earn you activity POINTS® values.
  • Be food-wise: Make sure you eat before you leave home, pack some fruit and/or an energy bar , and stay well-hydrated with bottled water.

Vacation Success!  The key to staying on plan while you’re away from home is to…well…PLAN!  Remember that Weight Watchers is a lifestyle change and not a diet, so wherever you go, your lifestyle comes with you---whether you are boarding a cruise ship, riding the rails, or hitting the open road.  The pointers offered up below will help you make wise choices and enjoy your trip.

  • Figure out your daily menu – at the start of each day, map out as best you can what you’ll be doing and where you’re likely to eat, including snack times. Then plan accordingly.  If you want a larger dinner at a fantastic restaurant, eat lighter at breakfast and lunch.  If you are in a hotel look over the menu before ordering

  • Pack snacks – tuck single-serving oatmeal in your suitcase or stock up on fresh fruits & veggies at a local market.  This tactic can help stave off the munchies so you don’t over indulge at mealtimes.

  • Eat your weekly POINTS® Allowance – is there a fancy dinner on the itinerary? A wine tour? This is EXACTLY why we have this additional allotment.  Use them and don’t feel guilty!

  • Move it! – Take advantage of hotel fitness rooms; opt for a walking tours rather than bus rides; dig in the sand and play on the beach with your kids.  Walk whenever you can.  Take the stairs to the breakfast buffet---and back up afterwards!  Rack up those activity POINTS®!

  • Carry on. If that Tiki Bar was calling your name, and you answered it, it’s okay.  Track it (and be HONEST) and get right back on plan.  Go for an extra long walk.  Don’t feel guilty.

Apple Slaw – Adapted from Big Oven

I was in the mood for a good slaw, but didn’t want to splurge on the POINTS® that the typical slaw had.  I was in the grocery store and I was able to do a search on my iPhone for slaw recipes, and I came across this one.  It sounded really good, and it came out fantastic.  My 10-year-old didn’t care for it, although she did taste it.  The 3-year-old? Well, he ate her entire serving and asked for more.  I loved it and so did Steve.  We are officially adding this one to the rotation!



POINTS® Value: 2 per serving
Servings: about 6 (1 cup) servings
Preparation Time: 5 min
Cooking Time: NONE—how cool is that???
Level of Difficulty: INSANELY Easy

Ingredients:

1 (16oz) package coleslaw mix (cabbage and carrot mix) You can use fresh, but this really made things easy!!!
1 large apple (I like Empire or Fuji for this, but use what you like—Granny Smith would add a nice tartness!)
¼ cup apple juice (we use no sugar added Tree Top)
2 Tbsp canola oil
2 Tbsp white wine vinegar (original recipe called for Champagne vinegar, but my grocery store didn’t carry it.  Also—you can use apple cider vinegar or rice vinegar for a twist!)
3 Tbsp lemon juice
Dash of salt and pepper
2 packets Splenda (I added this one on my own to give the dish a bit of sweetness…try Stevia too (I just happened to have a couple packets of Splenda lying around that needed to be used!)

Instructions:

1.         Julienne apple and combine with slaw mix in a large bowl.  Gently toss together.
2.         Combine remaining ingredients for the dressing in a blender and pulse until thickened.
3.         Pour dressing over slaw mix and toss to combine.



Italian Turkey Burgers

Our family LOVES a good burger for weekend cookouts.  Since the 4th is quickly approaching, I thought this was an appropriate recipe to include.  Put a spin on your July 4th tradition with these flavorful burgers, accented with fresh basil and tomato.  This particular recipe is one of Jennifer Hudson’s go-to recipes (note the JH in the star on the photo!)


POINTS® Value: 5 per serving
Servings:  4
Preparation Time:  20 min
Cook Time: 10 min
Level of Difficulty:  Easy

Ingredients:

1 spray(s) cooking spray  
1 pound(s) lean ground turkey  
1/3 cup(s) onion(s), chopped  
2 tsp minced garlic  
2 tsp fennel seed  
1/2 tsp table salt  
1/4 tsp black pepper, freshly ground  
4 spray(s) olive oil cooking spray  
2 small tomato(es), ripe, yellow and/or red, thinly sliced  
1 cup(s) basil, fresh, leaves, torn or thinly shredded  
4 item(s) reduced-calorie hamburger roll(s) [A good one is Nature’s Own Sugar-Free Whole Wheat buns.  These are about 2 points per bun—OR use sandwich thins for a 1 POINT® option!

Instructions:

Coat a grill or grill pan with cooking spray; preheat to medium-high.

In a large mixing bowl, combine turkey, onion, garlic, fennel seed, salt and pepper; form into four 1/2-inch-thick patties. Coat burgers and inside of rolls with cooking spray.

Grill burgers for 5 minutes; flip burgers and add rolls to grill. Grill open-face rolls until lightly charred, about 1 to 2 minutes; remove to serving plates. Grill burgers until cooked through, about 5 minutes more.

To serve, top grilled rolls with burgers and tomato slices; garnish with basil. Yields 1 burger per serving.

Notes:

For an extra hit of flavor, rub the bread with a cut garlic clove as it comes off the grill!

The art of estimating and using visual clues to help with portion sizing.

Hello everyone!  Again, I hope the week has been going well for each of you!  I somehow managed to add another two readers to the audience this week. YAY!!! If you all have any friends or family that you think may benefit from this, please let me know, and I would be happy to add them to the list!

My week went well thus far.  Our new iPhones are currently on the FedEx truck for delivery.  My husband is now being dubbed the “iGeek”.  He has been obsessing about this darned phone since the announcement came out that Gizmodo found a prototype for the new phone in a bar.  He has probably read every article published, both in print and on the web, about this new phenom!  Gotta love him though.  I think that this is very timely, considering my Palm Centro decided to have a massive coronary yesterday afternoon.  It spontaneously drained its battery, shut down, and reset.  Now the Bluetooth doesn’t work. Oh well, I think I can survive one day without my Bluetooth. At least I can make calls….for now…

Father’s Day went really well too.  I decided to get my husband a Barnes & Noble Nook for his gift this year.  He is a huge bookworm and thought this would be perfect for him.   I was right. He loved it…now I am a Nookwidow, in addition to an iPhone widow.  Yeesh!!!  I made him my lightened up version of Veal Parmigiana (his favorite) for dinner Sunday night.  The side dish was a nice steamed broccoli with a sour cream sauce.  I did a strawberry trifle for dessert.  I have the recipe for the dessert as written, but I am still not totally happy with the way the lightened up version came out.  I think I am gong to nix the fat free cream cheese that it called for, in favor of Neufchatel instead.  This will up the POINTS® a smidge, but I think the overall effect may be nicer.  The recipe is here in the bottom section of the newsletter. 

I think I am turning into a klutz in my old age.  I already shared my lovely spill story in the Fort Worth Stockyards.  Well…yes, my beloved peeps, the story now has a sequel.  I got these beautiful new strappy sandals over the weekend.  They are on a bit of a heel, but they are definitely manageable. I was walking through our lobby here in the office, and in the back of my mind, I knew that the tile on the floor was a bit slick, and I tried to take my time…but the klutz gods got me.  My left foot skidded across the floor, and I came down on my knee.  Nothing bad…mostly a bruised ego.  I thought I was home free, until…I saw a co-worker later that afternoon that asked if I was okay.  Man! I was THIS close!!!  By the way…interesting tidbit…did you know that it’s possible to skin your knee WITH pants on?  Never knew that.  Oh well…

Despite the clumsiness that I experienced this week, I will manage to get in four workouts this week.  I did 33 minutes on the elliptical yesterday, and I did my usual torture sessions with Coach Dwayne on Tuesday and Thursday.  Friday will be my last session for this week.  Provided that we do our walk on Saturday, this will put me at 5 days of activity. I am trying to get this in on a weekly basis.  The sweat sessions have been paying off for me.  Before I even commenced with the torture today, I need to preface this by saying that I started the workout with 15 minutes on a Gluteal workout on the ellipitical machine—totally forgetting that today was the leg workout!!!  Today’s torture session:

·         Hamstring curls on Ball (double ouchie after the above exercise!)
·         Hammer curls
·         Bridges on the Ball
·         Band Curls (similar to bicep curls with dumbbells)

I did show a 2.6 pound loss last week.  I hope to continue with this.  I think that in addition to the intensity of the activity, what really paid off for me in a big way was the fact that I think I am back on the tracking bandwagon.  Not the ‘tracking amnesia’ version that we tend to have from time to time.  I am back to using both FitDay AND e-Tools.  This way, in addition to staying within my POINTS® target, I also am getting feedback with regard to the nutritional makeup of my food intake (like the percentages of protein/fat/fiber/carb) that I am eating on a daily basis.

Our Weight Watchers meeting this week focused on ‘The Art of Estimating’ and using visual cues to help with portion sizes when we can’t measure.  Here are some common visuals:



A light bulb is about the size of a large potato, which comes in at 3 POINTS®



A tennis ball is about the size of a cup of rice, which equals 4 POINTS®



A computer mouse is about the size of a side-dish serving (like coleslaw), which comes in at 4 POINTS®



A CD is about the size of a large bagel, which is 6 POINTS®.  A good alternative there is a Bagel Thin (1 POINT®) or an Alternative Bagel (also 1 POINT® )


A deck of cards approximates the size of 3 ounces of protein.  3 oz of beef is 5 POINTS® and 3 oz of chicken is 3 POINTS®

Parmesan Crusted Fish

This recipe was the Wellness Wednesday dish for this week.  I can’t even begin to tell you how delicious this was.  Again, this recipe comes courtesy of http://www.eatbetteramerica.com.  This dish is great when paired with a side of broccoli and a little bit of a wild rice blend.  This quick-to-assemble baked fish is loaded with flavor and the topping keeps the fish moist.



POINTS® Value: 3 per serving
Servings: 4
Preparation Time: 10 min
Cooking Time: 15 min
Level of Difficulty: Easy

Ingredients:

1 lb halibut, cod, haddock or other firm-texture fish fillets (about 3/4 inch thick), cut into 4 serving pieces
2 tablespoons reduced-fat mayonnaise
½ teaspoon finely grated lemon peel
1/8 teaspoon pepper
2 tablespoons Progresso® Italian style bread crumbs
2 tablespoons grated Parmesan cheese
Lemon wedges, if desired 

Instructions:

1.         Heat oven to 450°F. Line 15x10x1-inch pan with foil; spray with cooking spray. Place fish fillets in pan.
2.         In small bowl, stir mayonnaise, lemon peel and pepper until blended. Spread over top of each fillet. In small bowl, mix bread crumbs and Parmesan cheese. Spoon evenly over mayonnaise mixture; pat crumb mixture lightly into mayonnaise.
3.         Bake 12 to 15 minutes or until fish flakes easily with fork. Serve with lemon wedges.

High Altitude (3500-6500 ft): No change.

Strawberry Angel Dessert

This is a wonderful dessert for spring and summer, when fresh strawberries are readily available. Every time I make this pretty dessert, someone asks for the recipe. Pulled this one off of the Taste of Home website.  As written, this is probably not the lightest of desserts, but I did make this using low fat cream cheese and fat free sweetened condensed milk. After doing some further analysis of the recipe, I realized that the first 4 ingredients were for a strawberry glaze.  AHA!!! Lightbulb moment! I nixed those ingredients altogether in favor of Marzetti's sugar free glaze for strawberries. You can find this in the produce section of most supermarkets right by the berries.  What was originally a 10+ POINT® dessert was reduced by 40%, down to a respectable 6 POINTS®.  Increase serving size to reduce the POINTS® Value per serving.  This really is a tasty splurge, and the hubster was grateful for a lovely dessert on Father’s Day!


POINTS® Value: 6 per serving (if made using the light version of the recipe—just follow substitutions!)
Servings:  12
Preparation Time:  30 min + chill time
Level of Difficulty:  Easy

Ingredients:

1-1/2 cups sugar
5 tablespoons cornstarch
1 package (3 ounces) strawberry gelatin
2 cups water
[OR REPLACE THESE ALTOGETHER WITH ONE CONTAINER OF MARZETTI’S SUGAR FREE GLAZE FOR STRAWBERRIES!]

2 pounds fresh strawberries, hulled, divided
1 package (8 ounces) 1/3 less fat cream cheese (also called Neufchatel cheese), softened
1 can (14 ounces) fat-free sweetened condensed milk (such as Eagle Brand®)
1 carton (12 ounces) frozen lite whipped topping, thawed
1 prepared angel food cake (8 to 10 ounces), cut into 1-inch cubes

Instructions:

For glaze, in a large saucepan, combine the sugar, cornstarch and
gelatin. Add water and stir until smooth. Cook and stir over
medium-high heat until mixture begins to boil. Cook and stir 1-2
minutes longer or until thickened. Remove from the heat; cool
completely. Cut half of the strawberries into quarters; fold into
glaze. (or simply open container of prepared glaze and combine with strawberries!)

In a small bowl, beat cream cheese until smooth. Beat in milk until blended. Fold in whipped topping.

In a 4-qt. clear glass bowl, layer half of the cake cubes, glaze and cream mixture. Repeat layers. Cut remaining strawberries in half and
arrange over the top. Cover and refrigerate for at least 2 hours or overnight. Yield: 12 - 16 servings.


Grilled Flank Steak with Onions

A simple garlic-oregano marinade adds wonderful flavor to flank steak.  It is served here with grilled red onions but asparagus or whole scallions would be just as yummy!!!


POINTS® Value: 4 per (3-1/2 ounce) serving
Servings:  6
Cooking Time:  24 minutes
Level of Difficulty:  Easy

Ingredients:

3 Tbsp red wine vinegar  
1 Tbsp olive oil  
2 tsp dried oregano  
2 tsp minced garlic  
1/4 tsp black pepper, freshly ground  
1 1/2 pound(s) raw lean flank steak  
3/4 tsp table salt, divided  
1 large red onion(s), cut into 1/4-inch-thick slices  
2 spray(s) cooking spray

Instructions:

In a shallow glass dish (or sealable food storage bag), mix vinegar, oil, oregano, garlic and pepper. Add steak; turn to coat, making sure steak is coated with vinegar mixture. Cover dish (or seal bag); marinate in refrigerator for at least 30 minutes.

Heat outdoor grill.

Remove steak from marinade; discard marinade. Sprinkle steak with 1/2 teaspoon salt. Coat onions with cooking spray; sprinkle with remaining 1/4 teaspoon salt.

Grill steak, turning once, until medium rare, about 15 minutes, or longer for desired degree of doneness. Let steak rest for 10 minutes.

While steak is resting, grill onions, turning occasionally, until lightly charred and tender, about 7 to 9 minutes.

To serve, thinly slice steak against the grain and place on a serving platter; scatter onions over top. Yields about 3 1/2 ounces steak and 1/3 cup onions per serving.

Happy Hump Day!!!!  Gotta love a newsletter that starts with an excerpt from The Beatles.  I am a huge fan…since I was a little girl.  My favorite was always Paul.  Me and about a bazillion others!  This week didn’t start out great for me.  I forgot my weigh-in garb on Monday, so I ended up being up.  Not a big deal.  Good news story for next week, with a little luck (notice the Wings song thrown in there?) 

I started talking to some friends, and there seems to be a waning sense of motivation here lately.  It’s not just me either….seems pretty widespread.  I am not really sure what the cause is.  Why do we lose motivation? Maybe work is interfering, or maybe it’s just that tracking is getting old?  Not really sure.  I have been doing pretty well with tracking in e-Tools (which is Weight Watchers’ own…) but with FitDay, I have kind of slacked off quite a bit.  This is the program that tallies the total nutritional intake and provides all kinds of graphs. I made a pact with a very good friend that we are going to check in on each other every couple of days so that we can have some accountability and try to get back on the bandwagon.  Again, I didn’t quit by any means.  I am just on the part of the journey where you get off the highway at the wrong exit, and can’t seem to find an on-ramp.  I like that analogy!

This weekend, I did our usual 5k Parker Square walk with Karen.  By the time we got done, we were both pretty much stinky, sweaty, and tired.  Even at 8am, it was still hot and humid.  Whassup with that???  All in all? Good walk though.  We didn’t have any major child-related meltdowns this weekend, which is always nice.  Adam seems to be enjoying his swim lessons, quite a bit.  I think it helps that he has his friends with him.

The workouts this week are getting ridiculous!  I have been a total sweatball at the completion of each session, which I know is a GOOD thing, but I must not be cooling down enough.  I am still sweaty after getting out of the shower.  We have been doing crazy things like lunges with one leg on a stability ball and doing bridges with both feet on the stability ball.  Balance? Not really my strong suit.  Good thing was that I didn’t bust my butt or take anyone down with me.  I stood my ground, so to speak :::tee-hee:::  Sore hammies and sore legs so far this week.  Last workout of the week with Coach Dwayne is tomorrow…I think I can survive it.  Maybe.

Well, we got our new Weight Watchers leader this week.  She seemed a bit nervous, but she was cute, and the meeting went well…however, it was a much smaller meeting than in past weeks. I am really hoping that this isn’t the implosion of our Monday meeting.  I’d like to think that everyone was busy?? Oh well…at least Sally and I will be there together! 

The topic of this week’s meeting was “On the Right Track”. Here is my commentary on this subject…

This is a very relevant topic because I really do believe that the degree of weight one loses is directly proportional to the accuracy and stringency of the tracking that we do on a regular basis.  The research shows that you tend to lose 50% more weight when tracking than when you don’t.  I know at some point on our journey, we are or were all guilty of either lying by omission on our trackers, or just not tracking very well.  I went through a stint where I thought I was doing a good job, but realized that I’d forgotten to write some things down.  There are many ways to journal—before you eat, during the meal or after the meal. Some folks even do their journaling the day after (which I don’t recommend because of ‘tracking amnesia’).  I actually prefer to track before I eat.  I usually track my breakfast, lunch and snacks when I get into the office (since I usually have these meals with me, and I just take inventory at that time).  This actually helps me plan dinners because I know what’s left in my POINTS® budget for the day.

The basic point of the meeting is that tracking is actually your friend.  There are many tools out there to help you…and many won’t even cost you a dime.  For those in my audience not on Weight Watchers, there is a wealth of free information available on the web to help you with your journaling.  Paper trackers and computer software (such as FitDay) can help.  There are also a multitude of free food diaries out there on the web.  Get onto Google and check it out.  Once you find a paper tracker that you can live with, you can print them off and file them in a 3-ring binder and track your successes.  If you are up on a particular week, and want to know what worked in a prior week when you lost weight, by tracking you will have this information at the ready. A free online food tracking tool is also available at http://www.fitday.com.  I have the standalone PC version, and I love it.  The nice thing about the web version is that you only need access to a PC with an internet connection and you can track from anywhere.   If you ARE a Weight Watchers subscriber with an e-Tools subscription, you can use your Blackberry or iPhone to track your food as well.  A free app is available with your subscription.  I just wanted to throw that out there as well.

American Potato Salad

Steve had a friend over for dinner this weekend, and we decided to grill.  I am appalled at the fat and calorie counts on store-bought salads, so I set off to find one that I could make at home.  I found this one on the Weight Watchers website, and it turned out fantastic.  The only thing I did differently is leave out the hard-boiled egg.  Steve is not a fan of eggs in his potato salad, but you know what? It was fabulous WITHOUT it, and it probably saved a point or so.

Ingredients:

2 pound(s) Yukon Gold potato(es), peeled, cut into 1-inch chunks  
2 large egg(s), hard-boiled  (I left these out, and it didn’t hurt the dish at all!)
2 tsp apple cider vinegar  
1/2 cup(s) plain fat-free yogurt, Greek-style recommended  
1/4 cup(s) fat-free mayonnaise  
3 Tbsp sweet pickle relish  
1 1/2 tsp SPLENDA® SPLENDA No Calorie Sweetener  
1/2 tsp table salt  
1/2 tsp black pepper, freshly ground  
1/2 cup(s) celery, diced  
1/3 cup(s) red onion(s), chopped   

Instructions:

    Place potatoes in a large saucepan and cover with 2 inches of water; bring to a boil. Reduce heat and simmer, uncovered, until potatoes are fork-tender, about 7 to 9 minutes; drain and cool slightly.

    Meanwhile, in a large bowl, using a fork, mash yolk from 1 egg with vinegar until smooth. Add yogurt, mayonnaise, relish, Splenda, salt and pepper; stir until blended.

    Add potatoes, celery and onion to bowl; toss to mix and coat. Chop remaining egg white and egg; gently fold into potato salad. Cover and refrigerate until chilled. Yields about 3/4 cup per serving.

Notes:

A large amount of regular mayonnaise was replaced with some fat-free mayonnaise and creamy non-fat Greek-style yogurt.

Garnish with chopped dill, red onion and/or chives. For a change of pace, substitute 1-inch red potato chunks for the Yukon Gold potatoes.

Amaretto Berry Cheesecake

This is another great recipe that I adapted from Kraft.  I wanted something good for dessert and cheesecake was calling my name.  I didn’t want to do this one as written because the POINTS® were waaaaay too high to justify the splurge.  I substituted Neufchatel and fat-free cream cheese for the full-fat variety, and it came out fabulous.

Ingredients:

8 oz package Neufchatel cheese, softened
8 oz package fat free cream cheese, softened
½ cup sugar
½ tsp vanilla extract
3 Tbsp. almond-flavored liqueur (can use 1 tsp almond extract in place of the liqueur)
2 eggs (or ½ cup egg beaters)
1 lowfat graham cracker redi-crust
2 cups mixed berries (blueberries, raspberries and sliced strawberries)

Instructions:

PREHEAT oven to 350°F. Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add liqueur; mix well. Add eggs; beat just until blended.

POUR into crust.

BAKE 35 to 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with berries just before serving. Store leftover cheesecake in refrigerator.

Cajun Chicken with Fresh Tomato Relish

This was last week’s Wellness Wednesday choice in the cafĂ© downstairs.  I sent the newsletter out on Monday, so I missed getting this out to you.  This was another big hit, in my opinion.  Just enough heat!  No new one for today…as they did the Spicy Mexican Skillet Chicken dish again today.

Ingredients:

Relish

2 medium tomatoes, chopped (about 1 1/2 cups)
8 medium green onions, chopped (1/2 cup)
1/3 cup chopped celery
¼ teaspoon salt
¼ teaspoon red pepper sauce

Chicken

4 boneless skinless chicken breasts (about 1 lb)
3 teaspoons Cajun seasoning

Instructions:

1.  In medium bowl, mix relish ingredients; set aside. Heat gas or charcoal grill. Coat both sides of each chicken breast evenly with Cajun seasoning.

  1. When grill is heated, carefully oil grill rack. Place chicken on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 10 minutes, turning once, until juice of chicken is no longer pink when center of thickest part is cut (170°F). Serve chicken with relish.
